Rolling back on odometer...?

I would leave it as it is, and just make a note of the engine change date. That way, you have a record of the engine's miles, but also the miles done by the chassis and drivetrain so you know when they need servicing too. Also, I would personally be happier buying a car where that has been done rather than it having been rolled back to 0 with a new engine.
